The Most Irresistible Peanut Butter Energy Balls!


Races? Hikes? Zumba? Road Trips? These are THE snacks for you!
Loaded with protein, fiber and healthy fats these little gems will keep you full and loaded with energy throughout the day. And oh man…they’re tasty!
They’re the perfect mix between a granola bar and cookie dough and, trust me, the temptation to eat the entire batch in one go is strong!

Tastes like a peanut butter cup

I’m SOLD.

The good news about these little gems is that they’re totally customizable! No peanut butter? Sub any other nut butter. Not into chocolate? Omit it and add more oats and seeds. Never heard of flax seeds? Sub chia or hemp seeds. It’s that easy friends!

Ingredients

1/2 cup roasted oats
1/2 cup nuts - Almonds & Walnuts
1/4 cup coconut flakes
A handful of chocolate chips
1 tablespoon ground flax seeds (optional)
1/2 cup Peanut Butter
2 tablespoons Coconut Oil

Instructions

Toast the oats in a pan until brown

Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and chill in the refrigerator for at least half an hour, to make the mix easier to handle and mold.

Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.

*If the mix seems to dry, add in an extra tablespoon or two of honey or peanut butter. If the mix seems too wet (which may happen if you use natural peanut butter), add extra oatmeal.
